Pesto!

This has got to be one of the best things to ever have come out of the Mediterranean!

As you can see from the recipe below there is no reason whatsoever to buy this in a store - although there are some pretty good ones out there, including the Jamie Oliver version. But when something is this easy to make?

Tip: You can also grow Basil in a pot, provided you have the sunlight for it. Not only does it look lovely, it gives off a wonderful smell when you touch it. And, it keeps mosquitoes and houseflies out of the room that it is in.


INGREDIENTS
  • 1 cup fresh basil leaves
  • 3 cloves garlic, peeled
  • 3 tablespoons pine nuts
  • 1/3 cup freshly grated Parmesan
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup olive oil

INSTRUCTIONS
  • To make the pesto, combine basil, garlic, pine nuts and Parmesan in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.
  • Store in an airtight container in the refrigerator for up to 1 week.
